Because food should taste good

Easy food that tastes good is my main mission, along with being *sorta healthy*.

I had some cooked, leftover lentils to use up, and a bag of potatoes mocking me...

I decided to cut up the potatoes and bake them with the lentils,  a bag of frozen corn, an onion and nutritional yeast. Salted and peppered and dinner is ready about an hour later!!

Simple. Easy. Delicious, and *sorta healthy*

Alfredo! !

We feed quite a few people, so this meal is a little bit expensive with the use of hemp hearts, but it is totally worth it.

I did not have any unflavored almond or soy milk in the house, so I decided I was going to make oat milk. I went to strain it and managed to launch it all over the kitchen, which had me deciding to keep the pieces without straining.

You will probably need to adjust your garlic and salt to your own tastes, but here is an approximation of what I did.

I took about 12 ounces of mushrooms and sliced them with the food processor, along with a couple handfuls of baby spinach that I roughly chopped, and tossed it in a pan. I wish I had more spinach but it was the last of the clamshell. Toss the mushrooms and the spinach in a pan with vegetable broth and cook them down for a while.

Take one cup of oats and 3 cups of water and blend it with a high powered blender. If you want to strain it go ahead otherwise just add everything else that is to come to the blender before blending.
3 cups of hemp hearts, 1 teaspoon of salt , 6 cloves of garlic, 4 tablespoons of lemon juice.
Blend all of that up and then add it to your cooked down mushrooms and spinach. Stir and taste. I added a little bit of vegetable broth and salt to mine to get the right consistency and flavor. I am using 2 12 ounce packages of organic gluten-free fettuccine and serving line along with some baked asparagus.

To make a NORMAL sized recipe do this:

1/2 cup oats
1.5 cup water
1.5 cup hemp hearts
1/2 tsp salt (more as needed)
3 clove garlic
2 tbsp lemon juice

8oz mushrooms sliced super thin (food processor) 2 handfuls of spinach, rough chopped, cook down with veggie broth and then add the blended stuff to the pan and get it hot, but stir often as it will stick/burn. 

Cook 1 12oz package of fettuccine noodles, drain / rinse (if gf) and add to the sauce

I'm a dreamer

I am a dreamer.

I have this crazy , crazy idea that will just not leave my head. This idea would seem so crazy to any normal person, but I think I am seeing my vision taking up residence in my husband's head as well! 

Every now and then, I think I can even see my kids taking on my crazy idea too.

I want to leave it all. I want to sell all of our "stuff" and leave. I want to be free. The only thing stopping me from listing every last thing I own and leaving is finances. How do you support a family of 6+ on the road? We don't want or need much, but food and staying healthy are important. We are willing to take a pay cut to leave. What we make now, leaves us living paycheck to paycheck and we never have money or time to do stuff as a family. I hate that we are surrounded by so much meaningless "stuff". I am sick of hearing " there is too much to do" and "we are too busy". When did family become what you took care of after all the other stuff was done. When did family take the back burner to life? When did we all stop living? I want to be able to drop everything, and enjoy my family. I want less responsibility in the form of fancy big houses with perfect lawns. I want nothing more than I want to see every sight with my children beside me. 

My dream is to sell everything, and move my family into an RV. 

We want to travel up to 200 miles in a day, but not so far that we do not enjoy what is around us. 

I want to visit every awesome park, every beach, every children's museum and science museum. I want to go on an adventure.
This dream feels like it should be so easy, but I'm not quite reckless enough to risk being homeless and starving. 

I have to figure this out. 

Today, I let myself see how our days would look, only closer to home. We are experiencing a beautiful Wisconsin day today.  I took the  kids to the library to read and check out some books and games.
We then went to the park, where Torrin threw some major fits, which led us to walk down by the beach area. We were not in a hurry to get anywhere, or do anything. The only thing that was missing was my husband and dog. The kids played in the sand and dip their toes in the water, it was perfect.
I could picture us staying there all day, having a picnic in the grass or using one of the grills to grill some smart dogs. I could picture my kids walking along the trails or riding bike and exploring. I could see myself smiling at strangers with children and making small talk. I could see us all enjoying each others company until the sunset. 

I honestly think that this park would probably be one of our first stops on our adventure. It is so beautiful and worth taking the time to enjoy, even though it is close to our physical home now.

I forgot to mention: When we were at the library, I went to the "used/for sale" books and found a book that speaks volumes to me right now!! I bought it!

Vegan dinner, the easy kind

Yesterday, I found a mason jar with seasoned apples in it in my freezer. I took the apples out and hoped they would still be good.  ** it has been longer than I know since I stuck apples in the freezer...**

Today, the youngest Prince( Talon ) has been so grumpy, I was worried my apples would not get made into anything. I took 5 minutes to throw together a quick crisp and froze some bananas in the process.

Dinner tonight is Nice Cream with apple crisp, veggies and hummus!
Yummy. Nutritious. Easy!!

My crisp is a mixture of oats and walnuts with a small (not so healthy) addition of brown sugar. The apples were already sweetened with sugar and spiced to perfection. I tossed the apples into the processor to get them chopped up more, as they still had the peels on. Then, separately I processed the oat mixture.
Half the oat mixture in pan, all apples, other half of oats.

After my kids eat some veggies with hummus, (and quite possibly something else as my 3 yr old sort of runs the show when it comes to what he will eat. Don't judge, it's always *mostly* healthy! I will blend the frozen bananas with a small amount of soy milk to make a "nice cream" and serve it with our crisp!!
